Our Source

Grounded in origin.

Quality is established long before the roasting process begins. We maintain close relationships with dedicated farmers who harvest selectively, ensuring only fully ripened cherries make it to our facility.

By focusing on strict seasonal rotation, we guarantee that the green beans arriving at our bar are vibrant, expressive, and ready to be carefully developed through our profiles.

Valley Estate

A robust, naturally processed lot that yields heavy body and intense fruit notes, reminiscent of dried berries and cocoa nibs.

Best For: Cold Brew, Moka Pot

Extraction Methods

The final step in honoring the bean. We calibrate our equipment daily to match the exact requirements of each roast.

Traditional Espresso

Extracted under nine bars of pressure to yield a highly concentrated, viscous shot. This method amplifies the heavy base notes and creates our signature dense crema.

Filter & Pour Over

A gravity-fed approach that emphasizes clarity. By adjusting our pour rate and water temperature, we highlight the subtle aromatic qualities of our lighter single-origin offerings.

Slow Cold Steep

Submerged in chilled water for up to eighteen hours. This slow, low-temperature extraction prevents bitterness from developing, resulting in a naturally sweet and exceptionally smooth profile.
